Assuming your coolant levels were correct, the problem was probably a “stuck OPEN” thermostat. And removing the thermostat is about the same as a stuck open thermostat. The coolant needs the thermostat to stay closed until it reaches a certain temperature. When the thermostat is closed it keeps the coolant that was just released from being to hot into the radiator to cool back down so it can be reused to cool the engine. If the thermostat is stuck open or removed the coolant does not have enough time to cool in the radiator before entering the engine once more and therefore the engine temperature is increased instead of decreased.
Put a new thermostat in and that should take care of it.
