My truck is running hot. Changed the thermostat and cranked it up and the tempurture went right to 195. What else can I check?

OK, First off, 195 to 210 is normal operating temperature.
Couple things to check here. If the system was bleed properly so that there is not an air pocket. Also you will need to confirm the coolant hoses are actually getting that hot and that the sending unit isn’t sending a false Overheating reading.
